Watermelon Salad with Lime Vinaigrette
This Watermelon Salad is one of my personal favorite summer recipes. It’s simple, beautiful, and packed with nutrients your body craves during the warmer months. Watermelon is made up of over 90% water, making it an excellent choice for staying hydrated on hot days. It's also a wonderful source of vitamin C to support your immune system, vitamin A for healthy skin and vision, and the antioxidant lycopene, which helps protect our cells from oxidative stress. Fresh mint adds a bright burst of flavor while providing antioxidants and naturally supporting healthy digestion. The creamy goat cheese or feta contributes protein and calcium for bone health, while the extra virgin olive oil delivers heart-healthy fats that help your body absorb fat-soluble vitamins. Fresh Watermelon Salad with Lime Vinaigrette
Ingredients
• 6 cups watermelon, cubed
• 4 ounces goat cheese or feta, crumbled
• ½ cup fresh mint, chopped
Lime Vinaigrette
• 2 tablespoons extra virgin olive oil
• Juice of 1½ fresh limes
• ½ teaspoon sea salt
• ¼ teaspoon freshly ground black pepper
Directions
1 Cube the watermelon and let it drain for a few minutes to remove any excess liquid.
2 In a small bowl, whisk together the olive oil, lime juice, sea salt, and black pepper until smooth.
3 Place the watermelon and chopped mint into a large bowl. Pour the vinaigrette over the top and gently toss until evenly coated.
4 Transfer to a serving platter and finish with the crumbled goat cheese or feta.
5 Serve immediately and enjoy! This salad is best when it's fresh and chilled.
